So i've been on this server for a week now. I like it very much, most of the people are nice, mature, and it's not overloaded with custom mods or pay-to-win schemes. I've logged quite a few hours in that week (currently unemployed), and I have yet to see a single person or non-native building in the wild, and I've wandered pretty far. Is that normal? Any other server I would have had many people trampling through my property already, messing with my stuff any way they can. So how big is this map? Or am I just lucky?

Not entirely sure what you're asking, but the world border is at 30 000 blocks on each axis, both positive and negative, meaning that the world border is 60k by 60k blocks. My 'base' (if you can call it that) is about 10k blocks out, and my new one is even further out. Flying around with the elytra I've seen a whole bunch of buildings people made. Most of them seem to be within 6k blocks from spawn though. The server also isn't also big in terms of its playerbase by any means. Having 5 - 25 people online at the same time isn't going to make houses that common in a 60k by 60k world. As for the last bit, griefing isn't allowed, and neither building right next to other people (without their consent), so there's that.

Yeah the first thing I did was /random so I have no idea how far away from spawn I am. But even with the low population, I would think I would have seen *something* by now as I did walk around quite a bit. At least a village or temple that was already raided, but no, nothing yet. I would probably see more if I were flying tho, yes. I'm not complaining, it's actually a good thing I think, just found it very odd with my past experiences.

Just for fun I started walking from my house to spawn, I've walked 6994 blocks away (much further actual walking as I zigged and zagged) and finally found a unclaimed house (very basic). But that is pretty much all I've seen so far. That is awesome.

My only neighbour within a few thousand of my castle is someone I specifically invited to tp to the area. I'm about 15,000 out from spawn.
And then there's Borderville in one of the corners at the world boundary (do recall which direction from spawn though).
