On the launcher it should have a green arrow pointing downward beside the big green play bottom. Click on that and you can change the launch profile, which allows you to choose what version you run.

Simply pick the version that the server's on and voila.

It's been asked, various times by various people. Everyone keeps getting the same answer: When all the plugins are updated to 1.12. Until then the server will stay in the version it's in.
